Fresh spices are essential to any great curry. Just like coffee, spices need to be freshly roasted and ground so we roast, grind and cool our whole spice to bring out the best flavours. We then roast our onions, ginger and garlic in organic coconut oil, add our own freshly ground spices along with various other fresh ingredients and cook until the oil seperates. This technique ensures that the chilli is fully cooked which in turn results in a full bodied taste which doesn’t burn in the belly!
